This is my first sake in a while, as I have been biased toward shochu and awamori since the beginning of the year.
The rice, called "Izuwanosato" in Yamagata Prefecture, is polished to 60%.
The initial aroma is very faint and light.
The first sip tasted like a sweet white wine.
It was quite tasty.
