To be honest, I tend to avoid purchasing hiyaoroshi because it has a strong umami flavor, which is somewhat different from my personal taste. However, I bought Omine's hiyaoroshi because it was a bit special. This hiyaoroshi is a freshly-pressed Omachi, so I had high expectations that it would probably be fruity. When I actually drank it, I found that it did indeed have the umami of rice typical of hiyaoroshi, but it also had a grape-like acidity and full-bodied flavor. It is an extremely good sake that balances the hiyaoroshi-like umami with sweetness, acidity, and richness. It seems to go well with Camembert cheese, too. It may also be good with salty foods.
