The Special Junmai is made with 80% Hachitan-Nishiki (Kake rice) and 20% Yamadanishiki (Koji rice)! The taste is well-balanced with a strong sweetness and acidity! The Jungin version is 100% Hachitan-Nishiki. Personally, I prefer this one. The flavor of the rice comes directly from the rice, and the sweetness is stronger than that of the special junmai!
