I finally got to drink it, Blue Bottle (summer sake), the most popular brand in Kagawa Prefecture. The brewery, which has a long history and where Shinsaku Takasugi once hid out, uses carefully selected rice and water associated with Kukai. The drinking style is very light and clear, and you can gulp it down. It has just the right balance of fruity, sweet and sour flavors, and while it has a strong, dark taste that is typical of unfiltered sake, it has an excellent sharpness. Because it is a summer sake, the taste is more round and easy to drink than usual.
