In the mouth, there is sweetness and alcohol, followed by umami, sourness, and richness, with a lingering umami taste at the end. It tastes like a good combination of the best parts of honjozo sake! (?)
It is not too assertive, so it can be served with a variety of foods, including Japanese, Western, Chinese, and ethnic dishes. It tastes like a pure sake even though it is a honjozo (I like pure sake).
In my opinion, any sake introduced at a liquor store as "not really a honjozo" is a "must buy"! They are all delicious sake with good cosmetics.
