Wakamatsuya, which once went out of business as a sake brewer, once had a back room and was named after its history as a secret meeting place for the feudal lords who aimed for the opening of Japan and the bloodless opening of Edo Castle to civilization. Thanks to its slightly effervescent taste, the first cup of sake was so good that I drank it all in one gulp. The acidity that comes out as the sake rolls down the throat, combined with the smooth sweetness when swallowed, makes it a dry sake that is very easy to drink. The almost colorless liquid and the thin, inconspicuous legs make it a very easy-drinking dry sake.
