When the bottle is opened, it has a high gassiness, semi-automatic stirring, and a light nigori taste.
Fruity nose with a hint of lychee and strawberry.
The fruity aroma on top, the firm acidity like yogurt, the umami of rice, and the moderate sweetness spread out with a sense of shwashiness, and the sourness and bitterness quickly fade away. It was a bit drier than the other Hiran so far.
On the second day, the bottle was opened with a large pon, which made me impatient.
The sweetness and bitterness have increased a little, but the acidity is still prominent.
Sake that is refreshing with any meal and gives the impression of not being sake-like.
Went well with Genghis Khan (seasoned), sauteed sausage, green papaya salad with som tam sauce (very hot).
