I tried the very famous Hakutsuru. I was told that cold to room temperature is recommended. At first, I tried it at room temperature. At room temperature, it feels dry and umami. This is delicious. It is more fish than meat. I would say grilled fish. It seems to go well with everything. but I think it tastes better.
