アラジンCherry blossoms have started to bloom and it's spring 🌸 Let's have some spring sake 🍶. This is Tasake Junmai Ginjo Hyakushoku (Cherry Blossom) from Nishida Sake Brewery in Aomori City, Aomori Prefecture. The sake rice is made from "Hanamoi," Aomori Prefecture's preferred rice for sake brewing, which was created in 2002 by crossing Yamadanishiki with Aomori Prefecture's pride, Hanabuki, and is polished to a daiginjo level with a 50% rice polishing ratio, but it is considered a junmai ginjo. The brand name "Hyakushikai" is said to be derived from the strain name "Aoikei Sake No. 140" before the naming of Hwaso. The appearance is crystal with an extremely faint yellow tint. The aroma is fruity and sweet with hints of banana and melon, with a very slight nuance of acidity. First sip. The mouthfeel is smooth, with a juicy sweetness that seems to entwine with the palate, and then quickly disappears along with a hint of acidity. From the second sip, a fresh, strong acidity came along with the fresh sweetness. As it lay on the tongue, the rich ripe fruit-like sweetness rushed in, and as it rolled further, the umami flavor came forward, harmonizing well with the strong acidity and sweetness. The back palate has a pleasant acidity and astringency. While rich and fruity, the acidity gives it a spring-like character. Delicious! Thank you for the treat 🍶.
