This is the first Shinomine ultra-harsh junmai I've had since 2021, the year of its debut at Sakegawa. I was caught up in the installment and bought it, but is it actually a sneaky PB that this is so light nigori even though it is clear sake wherever else I see it or search for it?
The rice smells like freshly baked bread, plus grass and rice cakes. It smells nice and delicious, like it would go well with a meal.
When you drink it, you feel a light, slightly carbonated feeling in your mouth. There are quite a few bubbles on the glass. And the clarity is excellent! It is not particularly full and smooth, but it is not just a beautiful sake. Jun-dai" would be much smarter, but the umami and some complex flavors are present, so in a good way, it is considered to be a junmai-standard sake.
If you enjoy the taste of the ingredients, it goes very well with vegetables and fish, as well as meat dishes with a gentle taste, such as pork shabu-shabu. I enjoyed it with thinly sliced onions, garland chrysanthemum, and komatsuna greens. It is really nice to have a dry sake with a modern taste...!
