The top aroma is a sweet junmai aroma. First, it is served at room temperature. It has a soft mouthfeel and is well-balanced with a slightly spicy and acidic flavor, slightly sweet and easy to drink. The fragrance is pure rice.
Next, we warmed it up to lukewarm. The dryness became more pronounced. It is easy to drink, and both are good. If you want to drink it slowly, it is best served at room temperature, and if you want to drink it with a meal, it is best served warm. It is good both on its own and with a meal.
It went well with mackerel simmered in miso and spinach with sesame paste. Hitogokochi is delicious.
