辛子蓮根
He's a rookie, but inside he's an old-timer, the Kenei Kubo of the Japanese sake world! It has a lustrous mouthfeel, with a gorgeous iso-incense, a hint of sweetness, and a bitterness towards the end that lingers beautifully! I feel it is sharper or more cohesive than the Honjozo. With the exception of the Aisan brewery, the Jun-Gin and mixed breweries started this year. If you stock up on a bottle this year, it will be fun to compare the different types next year. I can't wait to see what new products you have coming up! Gollasso!
