I've decided to have 1.5 gong for lunchtime drinking.
The third and last drink I ordered was
Jyushidai secret sake, which I had never had before.
I drank a secret sake at New Year's, so I was curious about this one with a similar name.
(There was also Hakuun Korai and Ryuzuki, which I love, so I was really worried 😅)
I found out by looking at the label
I found out from the label that this is an old sake.
Domestic rice 35% polished, 15% alcohol by volume
The aroma is that of a Jyushiyo, but slightly more subdued.
On the palate
The corner of acidity has been removed, which is typical of an aged sake.
The sweetness and umami are well-defined, but
but its assertion is restrained by the passage of time.
The gorgeousness of Jyushi-Daiyo is evident in the first sip,
I don't have a strong impression of sweetness and acidity.
Personally, I prefer fire-brewed Jyushi-Dai to unpasteurized, but I think I prefer regular fire-brewed Jyushi-Dai to old sake (secret sake and secret sake were completely different).
