Tokushima is said to be famous for its sudachi sake (according to my hairdresser who is from Tokushima), and it has a citrusy taste like sudachi.
I heard that the invention of the blue light-emitting diode by a company in Tokushima led to the rapid spread of LED lighting around the world, and "LED Dream Yeast" was born by irradiating existing yeast with various types of light from LEDs.
It is a rare yeast used only in sake breweries in Tokushima Prefecture.
