The premium series of Senkyoku is said to consist of three products: "Kamosu", "Ura", and "Issei".
The brewing process uses Domaine Sakura Kame-no-o, which is limited to the rice paddies on the same water vein, and a rice polishing ratio of 40%. The rare product is made by taking the time to collect every drop of sake that drips down from the "Fukuro Shibori" method, in which the finished mash is placed in a sake bag and hung up.
The taste is simple. The aroma is clean, yet gorgeous and beautiful, with green apple and white grape flavors. It is a shame to drink it, but that's okay, it's my birthday.
I feel like I'm spoiling myself every time, using overwork as an excuse, but I'm sure it's just my imagination. I never complain (although I do), never stop smiling (or am I mad? I'll try to do my best so that I can do a better job every day!
