The aroma is balanced sweet and delicious alcohol.
Slightly tangy on the palate. Oh! It is fire-brewed but fresh. At first, it is smooth like water. Is it light? But then the sweetness, umami, sourness, bitterness, alcoholiness, and the hint of aroma all spread evenly. And at the end, there is a strong umami flavor.
A wonderful balance. Beautiful and gentle, yet firm. Haaaaah. Wow!
Of course it tastes great cold, but when it warms up, the sweetness expands and it tastes even better! I liked it at a temperature between 10 degrees Celsius (hanakairo) and room temperature (20 degrees Celsius).
If I were to use a Ghibli analogy, I would compare it to Nausicaä, the main character in "Nausicaä of the Valley of the Wind". Especially Nausicaa in the latter half and the last part of the movie. Not just sweet. Not just bitter. It is beautiful, gentle, and in harmony with the world.
