8/10 The last brewery of the day was Banjo Kotobuki. The brewery moved to Yamagata Prefecture. It is a sake made from the original sake yeast, so it has a lot of umami and the acidity comes in nicely. It was good at room temperature, but it was very good slightly warmed up to lukewarm.
