Usually don’t buy from Chiba but the packaging (& to be honest, the price) was good. Plus a Nama. From an internet search learn “Byakuya" is observed in the far north, & “just like the midnight sun, when there is no boundary between day and night and the sun never sets all night, the ingredients are kept partially secret”. So rice, yeast & polishing ratio not disclosed. Agree with the description that there is a nice
balance of sweetness and acidity, even if at dinner & not at midnight.
