<A hint of oak, bitter-sweet aluminium, pleasantly sweet. This time, Imi-san is "BARREL". As the name suggests, it is a sake aged in oak barrels. The unfiltered raw sake is aged in wine barrels that have been shaved and re-burned on the inside. How does it look like? Let's drink it. The aroma is sugary sweetness and a hint of oak. In the mouth, there is a gentle and well-balanced sweet, bitter, umami, and al-acid. From there, only the sweet, bitter, umami flavor gradually builds up. The bitter-sweet-alternative gradually increases. The gradual swelling is very pleasant. The sweetness, bitterness, and alcohol are all present, but they are not sticky sweetness or unpleasant bitterness, but rather a slightly bitter adult flavor. This bitterness is something I would prefer to pair with a meal rather than drink by itself. It was better to warm it up a little by hand to open up the flavor and aroma. If I were to compare it to Ghibli, it would be Hokuto-san from "From Up on Poppy Hill. He is so talented that he can pass it on to his juniors.
