It's been a long time since I've been to Hirotogawa.
I like Hirotogawa's ruggedness and the fact that they don't play with the packaging.
This time it is a special junmai.
The aroma is sweet like a peach.
The mouthfeel is slightly thick.
There is sweetness, but also a hint of bitterness.
There is also a strong umami of rice.
There is a bitter aftertaste like distant thunder, but it is a refreshing and easy-to-drink sake.
I was unsure of the best pairing, as it seems to go well with sour flavors and fried foods, but it is a perfect match with dengaku miso!
We must keep miso-based snacks on hand.
Pairings: Salmon sushi, salmon carpaccio, fried small sea urchin, garland chrysanthemum salad with ham and salted kelp, tomato with camembert cheese, carrot tuna, sweet vinegared turnip, dengaku miso
