The seventh bottle was Wataya Special Junmai Miyamanishiki 55.
From here on, it was the turn of "sake that is dry but has the flavor of rice," a favorite of a certain section chief of one of our suppliers.
This was one of the bottles we asked Mr. Murai, the president of Gin-no-Sake Kibune, to include some dry sake.
From a comment on the web
------
A special junmai sake made from Nagano Miyamanishiki.
It has a neat taste that never wavers on its axis.
Easy to match with Japanese food in general.
It has a mild aroma and a strong acidity that makes it a perfect food sake.
It has a clean yet robust umami flavor.
------
The name of this sake is "KARAKURI".
Yes, it is deliciously refreshing with the acidity of Miyamanishiki.
The section chief also repeatedly said "It's delicious".
We did it!
It was delicious!
