This is Yoshida Kura u Hyakumangoku No Shiro from Yoshida Shuzo Brewery in Ishikawa Prefecture (Hakusan City). This is a modern line from Yoshida Sake Brewery, which brews Tetorigawa. The "u" is a double meaning of "gentle" and "you. It is brewed under the concept of sustainable sake brewing using only rice and water, with a thorough emphasis on terroir and a unique "modern Yamahai" method. This low-alcohol sake is brewed with "Hyakumangoku No Shiro" rice, which was created in 2020 in Ishikawa Prefecture, and polished to 60%. When poured, fine bubbles float on the surface of the glass. The appearance is crystal with a slight yellow tinge. The aroma has a refreshing sourness from the koji, yogurt and cheese nuances typical of Yamahai, and gentle aromas of gorgeous bananas and white flowers. On the palate, the mouthfeel is full of gas and a refreshing acidity, followed by a sweetness and umami with minerality, and a short aftertaste. Overall, it is refreshing and clean, with a good balance of sweetness, umami, and a sharp acidity. When you roll it over, the umami with minerality comes forward, and as you continue drinking, you can feel the beautiful bitterness tighten.
