Malted Rice: Ihyakumangoku from Niigata Kake rice: Koshiibuki from Niigata Rice polishing ratio 60%. Alcohol content 14%. According to the website, they insist on 1-stage brewing, unpasteurized sake, and bag pressing. When I drank it about three months ago, it had some sourness, but the sweetness was strong, giving the impression of a sweet, juicy, dessert sake. This time, it was less sweet, more acidic, and refreshing. Both were delicious.
