Sake from a brewery that had been out of business but recently revived. After listening to a presentation(?) by the owner of the brewery, I wanted to drink it and bought it by reservation. I was so excited to drink it that I made a reservation to purchase it.
The color of the sake was like rosé wine, as it is said to be made with red yeast. When I tried to open the bottle by turning the screw cap, the liquid level rose so much that it was almost raising the lees that had settled at the bottom of the bottle. The bottle was opened and closed repeatedly.
First, only the top clearings. The sweetness typical of Aizan was felt a little, but it was a different impression from the usual. It had almost no sake-like taste and felt like a cider.
When the fold is mixed, the color becomes like strawberry milk. This one also tastes a little like rice. I prefer the former if I drink it by itself, and the latter if I drink it with a meal.
