Kambara Junmai Ginjo Unfiltered Bagged Raw Raw Sake Takane Nishiki
I regretted not buying this "Kambara" after tasting it in the previous "Sake Tour".
On the way back from the "Traveling Sake" tour, bouken-san gave me information about a sake tasting at the Hanshin Department Store, so I was able to buy it.
I had it cold.
The aroma was deep with a mixture of alkaloa and sweet ginjo aroma.
The mouthfeel is clear with a mineral-like hardness, but it changes from gentle sweetness to sweet bitterness.
As the temperature rises, the initial bitterness gives way to a rich umami.
It has a full-bodied flavor.
The umami slowly sinks in, while the bitterness continues slightly and finishes with a sharp finish.
It seems that opinions are divided on whether it is rich umami or dry, but this is a strange taste.
It has a strong umami and a persistent bitterness, yet it finishes with a nice sharpness, so it must be perceived differently by each individual.
Ingredients: rice (domestic), rice malt (domestic)
Rice used: 100% Takane-Nishiki
Rice polishing ratio:50%.
Alcohol content: 16%.
