Last year, I enjoyed drinking Keitora's Shiboritate Nama-zake at this time of the year. This year, too, I was able to get it.
The standard Japanese sake from Niigata is light and dry, but this one has the freshness of nama-shu with a rich sweetness and umami flavor. The flavor of koji (malted rice) can also be felt well, and the aftertaste is a lingering zing of a good dryness. It is still a classic sake.
