It is characterized by a lactic acidity that is typical of lactobacilli. It is made from 100% Yamadanishiki produced in the special A district of Hyogo Prefecture, and its umami can be felt well. It is a good sake for a mealtime drink. My preference is for a more juicy sake, but it goes down easy!
