There are times when I want to drink Kyoto sake. I bought a bottle of Mori-Ba-ri! First, let's start with a simple Ihyakumangoku!
It is a very energetic sake that seems to release gas when you open it. It is supposed to be hi-iru (fire-irrigated). The aroma is fresh and invigorating, like sudachi (a type of citrus fruit). It has a soft but piquant gas pipe, similar to that of Hachisen, I think. There is almost no sweetness, and the original flavor of Gohyakumangoku is full of freshness like a blue citrus fruit. It has a hint of sudachi, or sudachi. The slight acidity is very pleasant. It has a sharp taste and leaves no aftertaste at all. It is the ultimate food sake and does not interfere with Kyoto cuisine at all, but it is a very well-balanced sake that does not lose Sawaya-Matsumoto's character. Thank you again for the sake!
