We had a chance to compare a freshly opened bottle of Huangshuisen with a bottle from the same tank that had been opened for a few days.
It's amazing how different they are!
The freshly opened sake has some gas, and when you hold it in your mouth, it has a wonderful crispness.
On the other hand, a few days later, it spreads quickly in the mouth and has a calm taste that leaves an impression.
Both are possible, but I think I prefer the freshly opened one... We decided to serve it with sashimi, the restaurant's specialty.
