The same mild aroma as the first rise, firm rice flavor and moderate sweetness spreads zingily with a crisp, but not strong, acidity, and is quickly quenched with a little alcohol and a slight bitterness.
The sweetness and moderate aroma are accompanied by a rather firm umami of rice, but the slight bitterness in the latter half of the taste is refreshingly refreshing. It is more like a meal accompaniment than a stand-alone sake, but it is crisp and tasty on its own as well.
It went well with sashimi of fresh raw tuna otoro from Shiogama and pickled seared tuna.
