Kinoshita Sake Brewery is known as a brewery brewed by an English toji. This sake was the first bottle I purchased at the Kyoto Takashimaya Sake Festival. It was a junmai ginjo recommended at the tasting. The label on the bottle said "Ichi-go yeast" but I couldn't remember what it was. After returning home, I looked it up and found that it was a yeast isolated from the "Sakura Masamune" sake mother. I had drunk summer sake "Ice Breaker" and "Fukubukuro" before, but this was the first time for me to drink sake made with No.1 yeast.
The image I have of Tamagawa is a heavy sake with a solid structure, but this sake was easy to drink. After opening the bottle, the aroma was like grapefruit or melon. The sweetness spreads on the palate and the acidity quickly breaks through. It was very tasty 😋.
