Himeki
We had this with dinner when we stayed in Gero Onsen.
It was said to be dry, but it was not that dry. It was refreshing and light. It is not that smoky either.
I think it goes well with food.
I thought it might be Junmai Ginjo, but I'm not sure. I would definitely like to see the drink menu include a description of namaishu or ginjo.
