I picked it up at a liquor store I don't usually go to, because they were selling a brand I was unfamiliar with.
I thought of Hana-no-Kou Sake Brewery when I thought of Kumamoto, but I was wrong. I thought of the Kyokai No. 9 yeast, which originated in Kumamoto. Among them, this brewery is the originator of Kumamoto yeast 🤔.
As the name suggests, it has a rich and mellow flavor. The umami is also very good, but it spreads slowly, so it does not have a strong impact on the palate.
As expected from No. 9 yeast, the aroma is gorgeous, and in addition, it has a strong nectar. Perhaps it is due to the fact that it is aged in autumn, but it also has a mild Shaoxing sake-like taste.
