There is definitely a white wine-like quality to it, but there is a strong bitterness. I wonder if there is a graininess in the far end.
Shunyo is sake rice, apparently. It is said that its low amino acid content makes it light without much polishing, but I wonder how it is. I can understand why some people like it.
