I came home from night shift and had a drink in the middle of the night.
I bought this one in October because I had more sake in the cellar that I wanted to save, and I was patient and let it sit undrinkable.
Originally, Kouei Kiku's Ikubou was a one or two year old sake.
I know that Koueikiku's Ikubou tastes best when it has been aged for a year or two!
The aroma is acidic and woody.
The aroma is acidic and woody, but when you put it in your mouth, it has a thick brown sugar-like sweetness and umami with a touch of acidity.
A bit gassy.
And there is a feeling of wood vat and brandy.
This is one of my personal top class Kouei Chrysanthemum lovers (but you have to let it sleep) ❤️
Don't drink it in one day, savor it slowly over a few days 😌.
Third day after opening the bottle. It's getting nuttier and deeper 😊I know it's just my personal opinion from a stupid tongue, but this is what makes this sake worth growing ✨.
