This is a limited Junmai Ginjo made at Nihon Seishu, the only sake brewery in Sapporo. Ginkaze", the best rice for sake brewing in Hokkaido, is polished to 55% to make a gorgeous and smooth sake typical of Junmai Ginjo. It features a fruity ginjo aroma reminiscent of strawberries and melons. It is easy to pair with appetizers, salads, seafood carpaccio, and fruit, not to mention sake on its own.
The label was designed based on a print by Koji Yuki, the representative of the Ainu Art Project, using the motif of the "crane" of Chitose Tsuru. "TONOTO" means "sake dedicated to the gods" in the Ainu language.
This sake is a drink of hope and gratitude to those who are dealing with the crisis caused by the new coronavirus infection. It was conceived by the Shin-Sapporo Retail Sake Sales Association Youth Association and released with the cooperation of Nihon Seishu.
