Unusual Tokushima sake. I saw it for the first time. I bought it immediately.
The sake rice is Tokushima's Yamada Nishiki.
The yeast is a proprietary yeast developed by Tokushima Prefecture.
Slightly gassy, with aromas of apple and pineapple.
It has sweetness, acidity, and a bit of bitterness, making it a sake similar to wine.
It was a perfect match for fish dishes and even white moldy cheese.
I was able to have a meal with it without any discomfort.
