Rice used: Asahi produced in Okayama Prefecture Rice polishing ratio: 50%. Sake degree: +5 Acidity: 1.6 Alcohol content ... 16 Price ... 1,800ml 3,047 yen (including tax) 720ml 1,540 yen (tax included) This is a limited distribution product released in October 2007 by Shinzawa Brewery, the brewer of the popular Hakurakusei and Atago no Matsu sake. It is brewed using Asahi sake produced in Okayama Prefecture. It is named "Hiryu" (meaning "flying dragon" in Japanese) so that it can deliver the highest quality to the world, just like a dragon flying in the sky. It expresses the evolution of food sake. (My impression after drinking it) My impression after taking a sip is that it is a little spicy and thin. It is like water, but the flavor of the rice is aromatic. It is a clear and colorless sake that goes down your throat easily and is a perfect food sake.
