We had this at a seminar on heating fruity sake. Cold Sake Pineapple aroma Sweet and juicy with a clean finish No schwarziness, just the way I like it. Warmed sake: put it on at about 60℃ and put it in your mouth when the temperature drops by 5-10℃. The aroma becomes more intense and peculiar. The umami taste becomes stronger. Slightly chestnut-like aftertaste. I like it better when the temperature is raised up to 60℃ with a little bit of addition, because it has more sweetness and no peculiarity of aroma.
