It seems to be a mixed fermentation of No.1 & No.2 yeast... sorry I'm not a fan 😱.
It's really good 😊It's been aged for about a year and has a good balance of sweetness, umami and acidity, like a triple attack 😊I don't feel any bitterness or astringency...it lingers in my mouth for a long time 👍
It was so good I had to have another one 🤩.
