It was a very tasty bottle.
As I concluded, I had never heard of such specifications for Tenmei before, and when I looked it up, I found out that it is a blend of the Nakadori series Zero to Two and a few other blames.
How could it not be delicious? And it's unfiltered, unpasteurized sake.
The aroma was a slight hint of tropical fruit.
The sweetness and umami are dense, and the acidity brings it all together nicely, so it is well balanced and not tiring to drink.
The bitterness that comes towards the end invites you to have another glass, making it a magical mellow sake that you can drink endlessly.
I paired it with cheese, but it would go well with meat dishes in general.
If you like Tenmei, there is no reason not to drink it.
