One of my current favorite sake breweries is Osato Sake Brewery in Kama City, Fukuoka Prefecture.
The aroma when you open the bottle is like amazake with the scent of rice!

Tastes like a dry white wine
I like the balance of clear and gentle acidity
Then, mix in the "Ori"...
The dry taste is combined with the rich rice flavor of the "ori".
I still feel that this is a sake made with rice!
I think I will finish it in one night.
