Hanayo-yoku is not easy to find.
It is an unfiltered, unpasteurized Junmai Daiginjo made from Echigo Gohyakumari. In the glass, it smells of pineapple, and on the palate, it has a fresh apple-like aroma. The first attack spreads the sweetness of the rice, but the sweetness is not mellow but mature and dry. The aftertaste gives the impression of disappearing quickly while leaving a bitter taste. It would be a shame to drink it alone. I'd like to drink it while talking with everyone.
