A series of never-drunks. Founded in 1854, the brewery is in its 5th generation. The name "Sai" comes from "Sai-no-kuni," the nickname of Saitama Prefecture, and is said to mean "the arrival of sake from Sai-no-kuni that will change the world. It is only possible with unfiltered unpasteurized sake. It has a good ginjo aroma, sweetness with a hint of lychee, a lingering aftertaste, and an interesting change in flavor. The gasiness and crisp acidity make it light and easy to drink. Koji rice: Yamadanishiki/Kake rice: Omachi, Polishing ratio: 50%.
