In keeping with that theme, Aizan is full of mellow flavor. It has a soft mouthfeel with a grain of concentrated flavor. As the sweet umami spreads in the mouth, the berry acidity tightens the flavor. The exquisite "acidity" that does not interfere with the rich umami flavor is a testament to the high level of perfection of this sake.
