Junmai Ginjo-shu with a refreshing summery finish. It has a refreshingly fruity aroma reminiscent of apples. The mouthfeel is clean and smooth, and the mellow flavor spreads lightly from there.
Sake rice is Gohyakumangoku, rice polishing ratio is 50%, and the yeast is a blend of No. 9 and No. 14 yeast.
It was served well chilled.
It starts with the impression of crisp and clear acidity, followed slightly by the umami of rice.
The impression of a summer sake stands out with its refreshing coolness ✨.
I also like the impression of dry sake that lingers in the mouth!
The ginjo aroma is not so strong, and the aroma is soft without asserting a faint apple 🍎 aroma or sweetness.
I paired it with squid sashimi. Sake goes well with sticky squid!
