Good evening. Tonight's sake is Keiryu, a 20 year old sake that has been aged for a long time.
It has a mellow aroma, a rich honey-like taste, a deep acidity, and a rich color. All of them make us feel the passage of years.
It gives you a nostalgic feeling, as if you are licking the honey from a big old tree.
It has a similar feeling to Shaoxing wine. It may be because it is also aged. The koji is different, though.
No need for snacks. You can enjoy this sake by itself.
