Today, it's Hakuryu after a long time.
It is a sake from Fukui Prefecture.
My image of this sake used to be a classic food sake type, but I heard that it has recently become more modern and current, so I bought it for the first time in a while.
First of all, it has a unique aroma on the palate, which I think is more characteristic of Hokuriku sake than Hakuryu.
It is umami type and has a strong acidity and bitterness.
It is easy to drink without feeling much alcohol.
I used to hear that the toji-san was having a lot of trouble with the direction of the flavor, so I wondered what would happen, but he has made a delicious sake👍.
I'll buy some more when it's time for new sake.
