This is a sake from Iinuma Honke in Chiba Prefecture, which I personally think is famous for Sakai no Yoake.
This sake is rich in flavor, in contrast to the freshly brewed sourness of the Dawn of Shakai.
At the first sip, the umami and sweetness come over the tongue, and then the slightly sour acidity comes in.
The more you drink, the more the flavor comes to dominate.
Ah, a sake that keeps on making you happy.
