I had an image of Hakurei as a dry wine, such as Shuten Doji, which goes well with seafood from the Sea of Japan. I chose Koda, which I had never had before.
It had a fruity ginjo-like aroma and a rich rice flavor. Although the rice polishing ratio is not high, there is no cloying taste at all and the taste is refreshing. You can feel the quality of the ingredients of Tango-produced Yamadanishiki. Koshihikari produced in Tango has been highly evaluated in recent years and is rated as special A. I wonder if Yamadanishiki can also be of good quality.
I think it is one of the best in the Junmai sake class.
